Grandma’s Fluffy Cinnamon Sugar Donut Muffins

 

Tastes like donuts, bakes like muffins—pure magic!

Ingredients:

For the Muffins:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 large egg
  • 1/2 cup (120ml) milk
  • 1 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional but nostalgic!)
  • 1/4 tsp salt

For the Cinnamon Sugar Topping:

  • 1/4 cup (60g) unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a mini or regular muffin tin (no liners needed unless you prefer them).
  2. Cream the softened butter and sugar in a bowl until light and fluffy.
  3. Add the egg, milk, and vanilla extract. Mix until smooth.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  5. Fold the dry ingredients into the wet mixture just until combined—don’t overmix.
  6. Spoon the batter into the muffin tin, filling each about 2/3 full.
  7. Bake for 15–18 minutes (regular muffins) or 10–12 minutes (mini muffins), until a toothpick comes out clean.
  8. Let cool for 5 minutes, then remove from the tin.
  9. Dip each warm muffin in melted butter, then roll in cinnamon sugar until coated.
