County Fair Funnel Cakes Recipe
Ingredients
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- Make the batter
- In a large bowl, whisk together the eggs, milk, and vanilla.
- In another bowl, combine flour, sugar, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, whisking until smooth and pourable (like pancake batter).
- Heat the oil
- In a deep skillet or pot, heat about 1–2 inches of vegetable oil to 350°F (175°C).
- Funnel the batter
- Pour the batter into a squeeze bottle, piping bag, or use a funnel (classic fair style).
- Carefully drizzle the batter into the hot oil in a crisscross pattern, forming a lacy circle.
- Fry until golden
- Cook for about 1–2 minutes per side, until golden brown.
- Use tongs to flip carefully.
- Drain and dust
- Remove the funnel cake and place it on paper towels to drain.
- Generously dust with powdered sugar before serving.
