Crock Pot Potato Broccoli Cheddar Soup

Ingredients:
- 4 cups potatoes, peeled and diced
- 2 cups broccoli florets (fresh or frozen)
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken or vegetable broth
- 1 cup milk (or half-and-half for creamier texture)
- 2 cups sharp cheddar cheese, shredded
- 2 tbsp cream cheese (optional, for extra creaminess)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 tbsp olive oil or butter (to sauté onions)
Instructions:
- Prep the base:
In a skillet, sauté the onion and garlic in olive oil or butter until soft (about 2–3 min). This step adds flavor but can be skipped for convenience. - Add to Crock Pot:
Place potatoes, broccoli, sautéed onion/garlic, salt, pepper, and broth into your Crock Pot. - Cook:
- On Low for 6–7 hours
- Or on High for 3–4 hours
Until potatoes are tender and broccoli is soft.
- Blend (optional):
Use an immersion blender to blend the soup to your preferred consistency — fully smooth or leave some chunks for texture. - Finish it up:
Stir in milk (or half-and-half), shredded cheddar cheese, and cream cheese. Let it melt and stir until creamy. Taste and adjust seasoning. - Serve:
Top with extra cheddar, crumbled bacon, or a dollop of sour cream. Serve with crusty bread or crackers.
