Crock Pot Potato Broccoli Cheddar Soup

Ingredients:

  • 4 cups potatoes, peeled and diced
  • 2 cups broccoli florets (fresh or frozen)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 cup milk (or half-and-half for creamier texture)
  • 2 cups sharp cheddar cheese, shredded
  • 2 tbsp cream cheese (optional, for extra creaminess)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (to sauté onions)

Instructions:

  1. Prep the base:
    In a skillet, sauté the onion and garlic in olive oil or butter until soft (about 2–3 min). This step adds flavor but can be skipped for convenience.
  2. Add to Crock Pot:
    Place potatoes, broccoli, sautéed onion/garlic, salt, pepper, and broth into your Crock Pot.
  3. Cook:
    • On Low for 6–7 hours
    • Or on High for 3–4 hours
      Until potatoes are tender and broccoli is soft.
  4. Blend (optional):
    Use an immersion blender to blend the soup to your preferred consistency — fully smooth or leave some chunks for texture.
  5. Finish it up:
    Stir in milk (or half-and-half), shredded cheddar cheese, and cream cheese. Let it melt and stir until creamy. Taste and adjust seasoning.
  6. Serve:
    Top with extra cheddar, crumbled bacon, or a dollop of sour cream. Serve with crusty bread or crackers.
