Lemon Garlic Butter Chicken and Green Beans Skillet

Ingredients

:

  • 2–3 boneless, skinless chicken breasts (cut into bite-sized chunks)
  • 2 cups green beans (trimmed)
  • 3 tbsp butter (divided)
  • 1 tbsp olive oil
  • 4 garlic cloves (minced)
  • Juice of 1 lemon + lemon zest
  • 1/2 tsp red pepper flakes (optional for a kick)
  • 1 tsp Italian seasoning (or a mix of oregano, thyme, basil)
  • Salt and black pepper to taste
  • Fresh parsley (chopped, for garnish)
  • Lemon slices (for garnish, optional)

Instructions

:

  1. Prep the chicken:
    Season the chicken pieces with salt, pepper, and Italian seasoning.
  2. Cook the green beans:
    In a large skillet over medium heat, melt 1 tablespoon butter with a drizzle of olive oil.
    Add the green beans and sauté for about 3–5 minutes, until tender-crisp. Remove and set aside.
  3. Cook the chicken:
    In the same skillet, melt the remaining 2 tablespoons of butter.
    Add the seasoned chicken and cook until golden and fully cooked through (about 5–7 minutes).
    Add the minced garlic during the last 1–2 minutes of cooking.
  4. Add lemon flavor:
    Pour in the lemon juice, add zest, and sprinkle red pepper flakes (if using).
    Stir everything to coat the chicken in the lemony butter sauce.
  5. Combine and finish:
    Add the green beans back into the skillet. Toss everything together and heat for another minute until well combined and warm.
  6. Garnish & serve:
    Top with chopped parsley and lemon slices. Serve warm!

 

Tips

:

  • You can swap green beans for asparagus or broccoli.
  • Add a spoon of honey to the lemon butter sauce if you like a hint of sweetness.
  • Serve with rice, mashed potatoes, or a side of crusty bread to soak up that delicious sauce!
