Cod with Garlic Herb Lemon Sauce

Ingredients:

– Two cod fillets
– Salt and ground black pepper
– One tablespoon olive oil
– One tablespoon butter
– One small shallot, finely chopped
– Two cloves garlic, minced
– One quarter cup white wine or seafood stock
– One tablespoon capers, rinsed
– Juice of half a lemon
– One teaspoon lemon zest
– Chopped fresh parsley or dill for garnish

Instructions:

Step One – Cook the Cod:
Season both sides of the cod fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Once the oil is hot, add the cod fillets and cook for about three to four minutes per side, depending on thickness, until the fish is golden and flakes easily. Remove from the pan and set aside.
Step Two – Prepare the Sauce:
Lower the heat to medium. Add butter to the same skillet. Once melted, add the chopped shallot and garlic. Cook for about one to two minutes until fragrant. Pour in the wine or seafood stock and stir to deglaze the pan. Add lemon juice, lemon zest, and capers. Simmer for three to four minutes until the sauce slightly reduces.
Step Three – Finish and Serve:
Return the cod to the skillet. Spoon the warm sauce over the top and let it sit for one to two minutes to absorb the flavor. Remove from heat and garnish with fresh herbs before serving.
