Salmon fried patties

Ingredients:

  • 1 can (14 oz / 400 g) salmon (or use cooked fresh salmon)
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped parsley (optional)
  • 1 egg
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1 tbsp mayonnaise or plain yogurt (optional for extra moisture)
  • Salt and pepper to taste
  • 1 tsp lemon juice (optional)
  • Oil for frying

Instructions:

  1. Drain salmon and remove any skin and bones if needed. Place it in a large bowl and mash it with a fork.
  2. Add onion, parsley, egg, breadcrumbs, mayonnaise, salt, pepper, and lemon juice. Mix well until combined.
  3. Shape the mixture into small patties (about the size of your palm).
  4. Heat oil in a skillet over medium heat. Once hot, fry the patties for 3–4 minutes on each side, or until golden brown and cooked through.
  5. Drain on paper towels and serve warm.

Serving Ideas:

  • With a dollop of sour cream or tartar sauce
  • On a bun like a burger
  • With a side salad or roasted veggies
