Ingredients:
- 1 can (14 oz / 400 g) salmon (or use cooked fresh salmon)
- 1/4 cup finely chopped onion
- 1/4 cup chopped parsley (optional)
- 1 egg
- 1/2 cup breadcrumbs (or crushed crackers)
- 1 tbsp mayonnaise or plain yogurt (optional for extra moisture)
- Salt and pepper to taste
- 1 tsp lemon juice (optional)
- Oil for frying
Instructions:
- Drain salmon and remove any skin and bones if needed. Place it in a large bowl and mash it with a fork.
- Add onion, parsley, egg, breadcrumbs, mayonnaise, salt, pepper, and lemon juice. Mix well until combined.
- Shape the mixture into small patties (about the size of your palm).
- Heat oil in a skillet over medium heat. Once hot, fry the patties for 3–4 minutes on each side, or until golden brown and cooked through.
- Drain on paper towels and serve warm.

- With a side salad or roasted veggies
