- Crumbled feta or goat cheese

Step-by-Step Instructions
Step 1: Prepare the Zucchini
- Thinly slice the zucchini lengthwise into strips about 1/8-inch thick. Pat them dry with a paper towel to remove excess moisture, which helps prevent sogginess.
- Brush both sides of the zucchini slices lightly with olive oil and season with salt and pepper.
Step 2: Cook the Zucchini
- Heat a large skillet over medium heat. Arrange the zucchini slices in a single layer in the skillet and cook for 1–2 minutes per side , until they soften slightly and develop light grill marks. Remove and set aside.
Step 3: Assemble the “Crust”
- Lay the cooked zucchini slices on a plate or baking sheet, overlapping them slightly to form a rectangular or circular “crust.”
- Spread a thin layer of marinara sauce evenly over the zucchini base.
Step 4: Add Cheese and Toppings
- Sprinkle shredded mozzarella cheese over the marinara sauce. Add your favorite toppings—pepperoni, diced veggies, or fresh herbs work beautifully.
- If desired, sprinkle a bit of crushed red pepper flakes or extra seasoning for added flavor.
Step 5: Melt and Serve
- Microwave the assembled zucchini “crust” for 1–2 minutes , or until the cheese is melted and bubbly. Alternatively, place it under the broiler for 2–3 minutes for a golden finish.
- Garnish with fresh basil or additional toppings before serving.
