Loaded Baked Potato with Steak Bites

 

Ingredients:

4 russet potatoes
1 lb steak (sirloin or your choice), cut into bite-sized pieces
2 tbsp olive oil
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions
4 strips cooked bacon, crumbled
Preparation:

Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake for 45-60 minutes until tender.
While potatoes bake, heat olive oil in a pan over medium heat. Season steak with salt and pepper, and cook for 4-5 minutes until browned and cooked to desired doneness. Set aside.
Once potatoes are baked, cut a slit in the center and fluff the insides with a fork.
Top each potato with steak bites, cheddar cheese, sour cream, green onions, and crumbled bacon.
Serve immediately and enjoy!
