Cherry Cheesecake Lush is an irresistible no-bake dessert layered with creamy cheesecake, sweet cherries, and a graham cracker crust. It’s perfect for parties, potlucks, or anytime you crave a cool and refreshing treat.

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup (1 stick) unsalted butter, melted

For the Cheesecake Layer:

  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups whipped topping (like Cool Whip)

For the Cherry Layer:

  • 1 (21 oz) can cherry pie filling

For the Topping:

  • 2 cups whipped topping
  • 1/4 cup graham cracker crumbs (optional, for garnish)

INSTRUCTIONS

  1. Prepare the Crust:
    • In a medium bowl, mix the graham cracker crumbs and melted butter until evenly combined.
    • Press the mixture firmly into the bottom of a 9×13-inch baking dish to form the crust. Refrigerate while you prepare the filling.
  2. Make the Cheesecake Layer:
    • In a large bowl, beat the softened cream cheese and powdered sugar with an electric mixer until smooth and creamy.
    • Gently fold in the whipped topping until fully combined.
    • Spread the cheesecake mixture evenly over the chilled crust.
  3. Add the Cherry Layer:
    • Spoon the cherry pie filling evenly over the cheesecake layer, spreading it gently to avoid mixing the layers.
  4. Top with Whipped Topping:
    • Spread the remaining whipped topping over the cherry layer. Smooth the top with a spatula for an even finish.
  5. Chill:
    • Sprinkle with graham cracker crumbs (if desired) and refrigerate for at least 4 hours or overnight to allow the layers to set.
  6. Serve:
    • Cut into squares and serve chilled. For extra flair, garnish each piece with a cherry or a dollop of whipped cream.
