Mexican Street Corn

Have you ever made Mexican Street Corn at home before?? If not then you’re missing out and should add this to your must try list ASAP!


  • 4 whole ears of corn on the cob or 6-8 half cobs
  • ¼ cup mayonnaise
  • 2 tablespoons cilantro, chopped fine
  • 1 tablespoon lemon juice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 4 tablespoons queso cotija

How To Make Mexican Street Corn

  1. In a small bowl mix mayo, cilantro, lemon juice, chili powder, and garlic powder until well combined, set aside
  2. Grill corn on outdoor grill or indoors on a grill pan
  3. Brush with mayo mixture
  4. Sprinkle on queso cotija
  5. Garnish with additional cilantro and chili powder
  6. Serve & enjoy!
