Snickerdoodle Muffins Recipe

Let’s attack the middle of the week with these Vegan Snickerdoodle Muffins. Ultra soft, super crispy on the outside, preferably served warm :). Perfect for small cravings, breakfast or for anyone who loves muffins in general. It is your ally for autumn with the perfumes associated with this season. Cinnamon and vanilla.
How can I describe these vegan muffins to you? I think that first there is the layer of cinnamon sugar which caramelizes and gives an unstoppable crispness when cooked. Inside it is certainly soft but the texture reminds me a little of canelés but without the taste. This side a little “egg” and very moist. I think that with another formulation, a canelés recipe can potentially be made.
And to think that in a few days now we are moving on to the year 2023!!! Do you have something planned? We not especially, I think it will be a quiet evening with a good meal. But how time flies. And to gently enter this new year, there is nothing better than a recipe for vegan muffins. It’s been a while since I made muffins so I wanted to fix it with today’s recipe.

° 200 gr of Flour (1 3/4 Cups All Purpose Flour)
° 1 tbsp Cornstarch (1 tbsp Cornstarch)
° 1 tsp Baking Powder (1 tsp Baking Powder)
° 80 gr of Sugar (1/3 Cup Cane Sugar)
° 120 gr of Vegan Yogurt (1 Cup Vegan Yogurt)
° 240 mL of Plant Based Milk (1 Cup Plant Based Milk)
° 1 tsp Apple Cider Vinegar (1 tsp Applecider Vinegar)
° 110 mL Melted Coconut Oil (1/2 Cup Coconut Oil, Melted)
° 1 tsp Vanilla (1 tsp Vanilla Extract)
° 50 gr of Sugar + 2 tsp of Cinnamon (1/4 Cup Sugar + 2 tsp Cinnamon)
– Preheat oven to 180°C and prepare your muffin tin.
– In a bowl, mix the vinegar and soy milk, leave for 5 minutes.
– In a salad bowl, pour all the dry ingredients and whisk. Then add the liquids. Mix again to incorporate everything without stirring too much.
– Fill your muffin cups with an ice cream scoop.
– Sprinkle cinnamon sugar on top of each muffin.
– Bake for 15-20 minutes or until golden brown and the tip of a toothpick comes out dry.
– Put them on a rack and let them cool.
