1 lb ground beef

1 onion, finely chopped

1 bell pepper, chopped (optional)

1 cup shredded cheese (cheddar or mozzarella)

1 packet taco seasoning (or your own blend of cumin, paprika, garlic powder, salt, pepper, and chili powder)

6-8 large flour tortillas

2 tbsp olive oil or butter

1/2 cup sour cream (optional for serving)

Instructions:
STEP 1: PREPARE THE GROUND BEEF FILLING
Start by heating a skillet over medium heat and adding olive oil or butter. Once heated, add the chopped onion (and bell pepper, if you’re using it) and cook for about 3-5 minutes until softened. Then, add the ground beef and break it apart using a spatula or spoon as it cooks. Continue cooking for 6-8 minutes, or until the beef is browned and fully cooked through. Drain any excess fat.
Once the beef is cooked, stir in your taco seasoning or your homemade spice mix. Add a bit of water if the mixture feels too dry, and let it simmer for 2-3 minutes to allow the flavors to meld together.
STEP 2: ASSEMBLE THE WRAPS
Preheat your oven to 375°F (190°C). Lay each tortilla flat on a clean surface. Spoon a generous amount of the ground beef mixture into the center of the tortilla, then sprinkle shredded cheese over the top. Carefully roll up each tortilla, folding in the sides as you go to create a tight wrap.
STEP 3: BAKE THE WRAPS
Arrange your filled wraps in a baking dish, seam-side down. Top with extra shredded cheese and a light dusting of taco seasoning if desired. Place the baking dish in the oven and bake for 15-20 minutes, or until the tortillas are golden brown and the cheese is melted and bubbly.
STEP 4: SERVE
Once baked, remove the wraps from the oven and garnish with fresh cilantro or parsley for a pop of color and freshness. Serve these wraps with a side of sour cream for dipping, or enjoy them on their own!
