Garlic Butter Steak and Potatoes Skillet

INGREDIENTS

  • 5 lbs NY strip steak, sliced into strips

  • 1 tbsp olive oil

  • 1 lb baby golden potatoes, quartered or halved

  • 2 tbsp unsalted butter, divided

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 3 cloves garlic, minced

  • Salt and pepper, to taste


INSTRUCTIONS

  1. Cook the potatoes:
    Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
    Add the potatoes, oregano, thyme, rosemary, salt, and pepper.
    Cook, stirring frequently, for 3–5 minutes, or until the potatoes are fork tender and golden.
    Remove from skillet and set aside.

  2. Cook the steak:
    In the same skillet, melt the remaining 1 tbsp butter.
    Add the steak strips and garlic.
    Cook for 3–4 minutes, stirring only occasionally, until the steak reaches your preferred doneness (medium-rare to medium works great).

  3. Combine and serve:
    Return the potatoes to the skillet.
    Toss everything together for 1–2 minutes to reheat and coat with the garlic butter sauce.
    Adjust salt and pepper to taste.

  4. Serve hot — optionally, garnish with fresh parsley or a squeeze of lemon for brightness.


💡 Tips:

  • For even richer flavor, add a splash of beef broth or red wine to deglaze the pan before adding the potatoes back in.

  • You can substitute sirloin or ribeye if you prefer a different cut.

  • Make sure your skillet is hot before adding the steak for a perfect sear.
