Ingredients

- 1 lb baby potatoes – halved or quartered (depending on size)
- 8 oz green beans – washed and trimmed
- 1 small yellow onion – cut into wedges or slices (about 1 cup)
- 1 lb pre-cooked andouille sausage or kielbasa – sliced into 1-inch diagonal pieces
- ¼ cup olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp Italian seasoning blend (oregano, basil, thyme, rosemary)
- ½ tsp ground black pepper
✅ OPTIONAL ADD-ONS:
- Sprinkle of red pepper flakes for heat
- Grated Parmesan cheese before serving
- Fresh parsley or thyme for garnish
🔥 Instructions
1. Preheat Oven
- Preheat your oven to 425°F (220°C).
🔥 High heat = crispy potatoes and caramelized edges.
2. Prep the Pan
- Line a large rimmed baking sheet with parchment paper or foil (for easy cleanup).
- Spread the potatoes and onions evenly across the pan.
- Drizzle with 2 tablespoons of olive oil and sprinkle with half the salt, garlic powder, Italian seasoning, and pepper.
- Toss well to coat — use your hands or a spatula.
3. Roast the Potatoes First
- Place the pan in the oven and roast for 15 minutes.
✅ Why? Potatoes take longer to cook — this head start ensures they’re tender and golden.
4. Add the Sausage & Green Beans
- After 15 minutes, remove the pan from the oven.
- Push the potatoes and onions to one side.
- Add the sliced sausage and green beans to the pan.
- Drizzle with the remaining olive oil and sprinkle with the rest of the seasonings.
- Toss everything gently to distribute the oil and spices.
5. Finish Roasting
- Return the pan to the oven and roast for 20–25 minutes, stirring once halfway through.
- Cook until:
- Potatoes are fork-tender and crispy on the edges
- Green beans are bright green and slightly blistered
- Sausage is browned and heated through
