Ingredients

Banana Cake

  • ½ cup (1 stick) butter, softened

  • 1 ½ cups granulated sugar

  • 2 large eggs

  • 1 cup sour cream (full-fat recommended)

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

  • 1 cup mashed bananas (about 3 ripe bananas)

Cream Cheese Frosting

  • ½ cup (1 stick) butter, softened

  • 8 oz cream cheese, softened (full-fat recommended)

  • 1 teaspoon vanilla extract

  • 3 cups powdered sugar

  • 2 tablespoons heavy whipping cream

Instructions

Make the Cake

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray.

  2. In a large bowl (or stand mixer with paddle attachment), cream butter and sugar until light and fluffy, about 2–3 minutes.

  3. Add eggs, sour cream, and vanilla. Mix until smooth and creamy.

  4. Add flour, baking soda, and salt. Blend on low just until combined.

  5. Gently fold in mashed bananas.

  6. Pour batter into the prepared dish and spread evenly.

  7. Bake for 25–35 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs. Edges and top should be lightly browned.

  8. Let cake cool completely before frosting.

Make the Cream Cheese Frosting

  1. In a large bowl, beat butter and cream cheese until smooth.

  2. Add vanilla, powdered sugar, and heavy cream. Beat on low, then increase speed until thick, creamy frosting forms.

  3. Adjust consistency if needed: add a little more powdered sugar for thickness or a splash of milk for softness.

Assemble

  • Spread frosting evenly over the cooled cake.

  • Cut into squares and, if desired, garnish each piece with banana slices and chopped walnuts.
