Forfar Bridies (Scottish Hand Pies)

Forfar Bridies are savory hand pies originating from Forfar, Scotland. With a rich, meaty filling encased in flaky, crisp pastry, they make a delicious and portable meal. This recipe captures the rustic, satisfying essence of a classic bridie, making it the perfect comfort food for a chilly day.

Ingredients

For the Pastry

  • All-purpose flour: 2 cups
  • Salt: ½ teaspoon
  • Unsalted butter (chilled, diced): ½ cup
  • Cold water: ½ cup

For the Filling

  • Minced beef: 1 lb
  • Onion (finely chopped): 1
  • Salt and pepper: To taste
  • Beef suet (optional): 2 tablespoons

How to Make Forfar Bridies

1. Make the Pastry:

In a large bowl, combine the flour and salt. Add the diced butter and rub it into the flour mixture with your fingertips until it resembles coarse breadcrumbs. Gradually add the cold water and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

2. Make the Filling:

In a skillet, cook the minced beef and onion over medium heat until the meat is browned and the onion is soft. Season with salt and pepper, and stir in the beef suet if using.

3. Prep & Assemble:

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Divide the pastry dough into equal portions and roll each into a circle. Place a generous spoonful of cooled filling on one half of each circle.

4. Shape the Bridies:

Fold the other half of the pastry over the filling to form a semi-circle. Crimp the edges with a fork to seal tightly, ensuring no filling leaks out during baking.

5. Bake:

Arrange the bridies on the prepared baking sheet and bake for 25–30 minutes, or until golden brown and flaky.

6. Serve:

Enjoy the bridies warm.

Expert Tips for Success

  • Keep it Cold: Keep both the pastry dough and the filling cold while assembling to prevent the dough from becoming too soft and difficult to handle.
  • Egg Wash: For a glossy, golden finish, brush the tops with an egg wash (1 beaten egg mixed with a splash of water) before baking.
  • Make It Vegetarian: Replace the minced beef with a mixture of lentils, mushrooms, and herbs for a hearty vegetarian version.
  • Serve Traditionally: For a classic Scottish touch, serve Forfar Bridies with mashed potatoes and gravy.
