Ingredients
- 2 cups apples, peeled and diced (Granny Smith or Honeycrisp work best)
- 2 tablespoons butter
- ¼ cup brown sugar
- 2 tablespoons granulated sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg (optional)
- 1 teaspoon lemon juice
- 2 teaspoons cornstarch mixed with 2 teaspoons water (slurry)
- 10–12 egg roll wrappers
- Vegetable oil (for frying)
Optional Topping:
- Cinnamon sugar (½ cup sugar + 1 teaspoon cinnamon)
- Caramel sauce (for dipping)
👩🍳 Instructions
1. Make the Apple Pie Filling:
- In a skillet, melt butter over medium heat.
- Add diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, and lemon juice. Stir and cook 5–6 minutes until apples soften.
- Stir in cornstarch slurry and cook 1 more minute until thickened. Remove from heat and let cool slightly.
2. Assemble Egg Rolls:
- Place an egg roll wrapper on a clean surface, one corner facing you.
- Spoon 2–3 tablespoons of apple filling in the center.
- Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a little water.
- Repeat with remaining wrappers and filling.
3. Fry the Egg Rolls:
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Fry egg rolls in batches for 2–3 minutes until golden brown and crispy.
- Drain on paper towels.
4. Coat & Serve:
- While warm, roll in cinnamon sugar (optional).
- Serve with caramel or vanilla ice cream for dipping.
