Apple Pie Egg Rolls

Ingredients

  • 2 cups apples, peeled and diced (Granny Smith or Honeycrisp work best)
  • 2 tablespoons butter
  • ¼ cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg (optional)
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch mixed with 2 teaspoons water (slurry)
  • 10–12 egg roll wrappers
  • Vegetable oil (for frying)

Optional Topping:

  • Cinnamon sugar (½ cup sugar + 1 teaspoon cinnamon)
  • Caramel sauce (for dipping)

👩‍🍳 Instructions

1. Make the Apple Pie Filling:

  1. In a skillet, melt butter over medium heat.
  2. Add diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, and lemon juice. Stir and cook 5–6 minutes until apples soften.
  3. Stir in cornstarch slurry and cook 1 more minute until thickened. Remove from heat and let cool slightly.

2. Assemble Egg Rolls:

  1. Place an egg roll wrapper on a clean surface, one corner facing you.
  2. Spoon 2–3 tablespoons of apple filling in the center.
  3. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a little water.
  4. Repeat with remaining wrappers and filling.

3. Fry the Egg Rolls:

  1. Heat oil in a deep skillet or fryer to 350°F (175°C).
  2. Fry egg rolls in batches for 2–3 minutes until golden brown and crispy.
  3. Drain on paper towels.

4. Coat & Serve:

  • While warm, roll in cinnamon sugar (optional).
  • Serve with caramel or vanilla ice cream for dipping.
