Fried Chicken Gizzards recipe πβ¨
Ingredients
- 1 lb (450 g) chicken gizzards, cleaned and trimmed
- 2 cups buttermilk (or regular milk + 1 tbsp vinegar/lemon juice)
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- Β½ tsp paprika (optional for color)
- Β½ tsp cayenne pepper (optional for spice)
- 2 large eggs
- Vegetable oil, for frying
Instructions
1. Tenderize the Gizzards
- Rinse the gizzards and place them in a pot of salted water.
- Simmer for 30β45 minutes until tender (donβt boil too hard).
- Drain and let cool.
2. Marinate
- Place the cooled gizzards in a bowl and pour over the buttermilk.
- Cover and refrigerate for at least 2 hours (overnight gives best results).
3. Prepare Coating
- In a shallow bowl, mix the flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne.
- In another bowl, beat the eggs.
4. Coat the Gizzards
- Remove gizzards from buttermilk, dip into egg, then dredge in the seasoned flour.
- For extra crunch, repeat (egg β flour) for a double coating.
5. Fry
- Heat oil in a deep skillet or fryer to 350Β°F (175Β°C).
- Fry gizzards in small batches for 4β6 minutes, until golden brown and crispy.
- Remove and drain on paper towels.
Serving Suggestions
- Serve hot with hot sauce, ranch, or honey mustard.
- Great as a snack, appetizer, or with fries and coleslaw.
