Egg Muffins with Spinach, Bell Pepper, and Sausage

🥚 Ingredients (Makes about 12 muffins):

  • 10 large eggs
  • 1/2 cup milk (optional, for fluffier texture)
  • 1 cup cooked sausage (crumbled – pork, turkey, or chicken)
  • 1 cup chopped fresh spinach
  • 1/2 cup chopped bell pepper (any color or a mix)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your fave – optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or a bit of oil

🍳 Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Grease a muffin tin well with cooking spray or line with silicone muffin liners.
  3. Cook sausage in a skillet over medium heat until browned. Drain excess fat if needed.
  4. In a large bowl, whisk together eggs, milk (if using), salt, and pepper.
  5. Stir in the sausage, spinach, bell pepper, and cheese.
  6. Pour the mixture evenly into each muffin cup, filling about 3/4 full.
  7. Bake for 20–25 minutes, or until the centers are set and tops are golden.
  8. Let cool for a few minutes before removing from the muffin tin.

🥡 Storage Tips:

  • Store in the fridge for up to 5 days.
  • Freeze for up to 2 months. Reheat in the microwave for 30–60 seconds.
