Egg Muffins with Spinach, Bell Pepper, and Sausage
🥚 Ingredients (Makes about 12 muffins):
- 10 large eggs
- 1/2 cup milk (optional, for fluffier texture)
- 1 cup cooked sausage (crumbled – pork, turkey, or chicken)
- 1 cup chopped fresh spinach
- 1/2 cup chopped bell pepper (any color or a mix)
- 1/2 cup shredded cheese (cheddar, mozzarella, or your fave – optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or a bit of oil
🍳 Instructions:
- Preheat oven to 375°F (190°C).
- Grease a muffin tin well with cooking spray or line with silicone muffin liners.
- Cook sausage in a skillet over medium heat until browned. Drain excess fat if needed.
- In a large bowl, whisk together eggs, milk (if using), salt, and pepper.
- Stir in the sausage, spinach, bell pepper, and cheese.
- Pour the mixture evenly into each muffin cup, filling about 3/4 full.
- Bake for 20–25 minutes, or until the centers are set and tops are golden.
- Let cool for a few minutes before removing from the muffin tin.
