Cheesy Stuffed Meatloaf Bites

 

📝 Ingredients (makes 12 bites):

  • 500g ground beef (or a mix of beef and pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tbsp ketchup (plus more for topping)
  • 1 tsp Worcestershire sauce (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning (or a mix of dried oregano, basil, thyme)
  • 12 cubes of cheese (cheddar, mozzarella, or your favorite melting cheese)
  • Fresh parsley (optional, for garnish)

👩‍🍳 Instructions:

  1. Preheat oven to 190°C (375°F). Lightly grease a muffin tin or mini muffin tin.
  2. In a small bowl, soak the breadcrumbs in milk for a few minutes.
  3. In a large bowl, combine the ground meat, soaked breadcrumbs, onion, garlic, egg, ketchup, Worcestershire sauce, and seasonings. Mix until just combined — don’t overmix!
  4. Divide the meat mixture into 12 portions. Flatten each one in your hand, place a cheese cube in the center, and wrap the meat around it to form a ball.
  5. Place each ball into the muffin tin. Top with a small dab of ketchup (optional but delicious).
  6. Bake for 20–25 minutes or until the meat is cooked through and the tops are slightly browned.
  7. Let cool slightly, then garnish with chopped parsley if desired. Serve warm and gooey!

  • You can make them spicy by adding a pinch of chili flakes or diced jalapeños.
  • Serve with mashed potatoes, rice, or just as they are with a dipping sauce!
