Ingredients:
- 1 cup shredded zucchini (drained well)
- 1 clove garlic, finely grated
- 1/3 cup breadcrumbs
- 1/4 cup grated Parmigiano-Reggiano cheese
- 1 large egg
- 2 tablespoons chopped fresh chives (or 1 tablespoon dried chives)
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the zucchini: After shredding the zucchini, place it in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This is important to prevent the bites from becoming soggy.
- Mix the ingredients: In a large bowl, combine the drained zucchini, grated garlic, breadcrumbs, grated Parmigiano-Reggiano, egg, and chives. Mix everything until well combined.
- Shape the bites: Using a spoon or your hands, form the mixture into small balls or nuggets (about 1 tablespoon each) and place them on the prepared baking sheet.
- Bake: Bake in the preheated oven for about 18–20 minutes, or until golden brown and set, flipping them halfway through for even browning.
- Serve: Let them cool slightly and serve warm. They’re delicious with a side of marinara sauce, sour cream, or yogurt dip.
