✅ Ingredients (makes 6–8 small flatbreads)
- 1 cup grated carrot (about 1–2 medium carrots)
- 1 cup all-purpose flour (plus more for dusting)
- 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
- 2 tbsp plain yogurt or Greek yogurt
- 1 tbsp olive oil (plus extra for cooking)
- 1/2 tsp salt
- 1/2 tsp garlic powder (optional)
- 1/4 tsp black pepper
- 1/4 tsp baking powder
- Optional: chopped parsley or chives for flavor and color
👩🍳 Instructions
- Grate the carrots using a fine grater. Lightly squeeze to remove excess moisture if very juicy.
- In a mixing bowl, combine:
- Grated carrots
- Flour
- Cheese
- Yogurt
- Olive oil
- Salt, pepper, garlic powder
- Baking powder
- Optional herbs
- Mix and knead into a soft dough. If it’s too sticky, add a bit more flour. If it’s too dry, add a tiny splash of water or more yogurt.
- Divide the dough into 6–8 balls.
- On a floured surface, roll each ball into a flat disc (about 1/4 inch thick).
- Heat a non-stick pan or skillet over medium heat. Brush lightly with oil.
- Cook each flatbread for 2–3 minutes per side until golden and cooked through, with some nice brown spots.
- Serve warm with yogurt dip, hummus, or even just butter!
