Cheesy Carrot Flatbreads

 

✅ Ingredients (makes 6–8 small flatbreads)

  • 1 cup grated carrot (about 1–2 medium carrots)
  • 1 cup all-purpose flour (plus more for dusting)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 2 tbsp plain yogurt or Greek yogurt
  • 1 tbsp olive oil (plus extra for cooking)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder (optional)
  • 1/4 tsp black pepper
  • 1/4 tsp baking powder
  • Optional: chopped parsley or chives for flavor and color

👩‍🍳 Instructions

  1. Grate the carrots using a fine grater. Lightly squeeze to remove excess moisture if very juicy.
  2. In a mixing bowl, combine:
    • Grated carrots
    • Flour
    • Cheese
    • Yogurt
    • Olive oil
    • Salt, pepper, garlic powder
    • Baking powder
    • Optional herbs
  3. Mix and knead into a soft dough. If it’s too sticky, add a bit more flour. If it’s too dry, add a tiny splash of water or more yogurt.
  4. Divide the dough into 6–8 balls.
  5. On a floured surface, roll each ball into a flat disc (about 1/4 inch thick).
  6. Heat a non-stick pan or skillet over medium heat. Brush lightly with oil.
  7. Cook each flatbread for 2–3 minutes per side until golden and cooked through, with some nice brown spots.
  8. Serve warm with yogurt dip, hummus, or even just butter!

🌟 Tips

  • Want them extra cheesy? Sprinkle more cheese on top while cooking!
  • Make it spicy with chili flakes or smoked paprika.
  • You can also bake them at 400°F (200°C) for 10–12 minutes for a lighter version.
