These savory egg muffins are packed with protein, fresh spinach, and creamy feta cheese, making them a perfect grab-and-go breakfast or snack!
Ingredients:
- 6 large eggs
- 1 cup fresh spinach, chopped
- ½ cup crumbled feta cheese
- ¼ cup milk (or a dairy-free alternative)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder (optional)
- ¼ teaspoon red pepper flakes (optional, for a little heat)
- Olive oil spray, for greasing
Instructions:
- Preheat & Prep:
Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with olive oil spray to prevent sticking. - Mix the Batter:
In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and red pepper flakes (if using). Fold in the chopped spinach and crumbled feta. - Fill the Muffin Tin:
Pour the mixture evenly into the muffin cups, filling each about ¾ full. - Bake:
Bake for 18–22 minutes, or until the muffins are set and slightly golden on top. - Cool & Serve:
Allow them to cool for a few minutes before removing from the tin. Serve warm or store in the fridge for up to 4 days. They also freeze beautifully for meal prep!
