Spinach & Feta Egg Muffins

 

These savory egg muffins are packed with protein, fresh spinach, and creamy feta cheese, making them a perfect grab-and-go breakfast or snack!

Ingredients:

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • ¼ cup milk (or a dairy-free alternative)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon red pepper flakes (optional, for a little heat)
  • Olive oil spray, for greasing

Instructions:

  1. Preheat & Prep:
    Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with olive oil spray to prevent sticking.
  2. Mix the Batter:
    In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and red pepper flakes (if using). Fold in the chopped spinach and crumbled feta.
  3. Fill the Muffin Tin:
    Pour the mixture evenly into the muffin cups, filling each about ¾ full.
  4. Bake:
    Bake for 18–22 minutes, or until the muffins are set and slightly golden on top.
  5. Cool & Serve:
    Allow them to cool for a few minutes before removing from the tin. Serve warm or store in the fridge for up to 4 days. They also freeze beautifully for meal prep!
