📝 Ingredients:
- 1 lb (450g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt & pepper to taste
- 1/2 cup tomato sauce or salsa
- 1 cup shredded cheddar cheese (or Mexican blend)
- 6 large flour tortillas
- Oil for frying or brushing (for oven/air fryer)
🔥 Instructions:
1. Cook the beef filling:
In a skillet over medium heat, cook ground beef with onion until browned. Drain excess fat.
Add garlic, chili powder, cumin, salt, and pepper. Stir in tomato sauce or salsa. Let simmer for 5 minutes.
Remove from heat and stir in the cheese.
2. Assemble the chimichangas:
Spoon beef mixture onto the center of each tortilla. Fold in the sides and roll up like a burrito. Secure with toothpicks if needed.
3. Cook (choose your method):
- Fried: Heat about 1 inch of oil in a skillet. Fry each chimichanga seam-side down until golden and crispy (about 2–3 minutes per side). Drain on paper towels.
- Oven: Brush each chimichanga with oil and bake at 400°F (200°C) for 20 minutes or until crispy.
- Air fryer: Lightly brush or spray with oil and air fry at 375°F (190°C) for 10–12 minutes, flipping halfway.
