Sausage Potato Casserole with Veggies
Ingredients
- 4 cups potatoes, peeled and diced
- 2 cups cooked sausage (smoked, Italian, or breakfast style), sliced or crumbled
- 1 cup bell peppers, chopped (mix of red, green, yellow)
- 1 cup zucchini, diced (optional)
- 1 cup broccoli florets
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1/2 cup milk or cream
- 2 tbsp olive oil
- 1 tsp paprika
- Salt & pepper, to taste
- Fresh parsley or chives, for garnish (optional)
Instructions
- Preheat oven to 200°C / 400°F.
- In a large skillet, heat olive oil and sauté onion, garlic, and sausage until browned (5–6 minutes).
- Add the bell peppers, zucchini, and broccoli, cook for another 3–4 minutes.
- In a large mixing bowl, combine diced potatoes, cooked sausage-veggie mix, paprika, salt, and pepper.
- Pour the mixture into a greased baking dish (9×13 inch).
- Drizzle with milk/cream and sprinkle cheese evenly on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 20 minutes or until potatoes are fork-tender and cheese is golden.
- Garnish with chopped parsley or chives if desired. Serve warm!
