A chocolate lover’s dream — this pie has a luscious chocolate filling in a graham or cookie crust, topped with a classic coconut-pecan layer. And the best part? No oven required!

(Makes 8–10 servings)
For the Pie:
1 (9-inch) prepared graham cracker crust (or chocolate cookie crust for extra decadence)
1 (4-serving size) package instant chocolate pudding mix
1 ¾ cups cold milk
For the Coconut-Pecan Topping:
½ cup evaporated milk
½ cup granulated sugar
1 large egg yolk
¼ cup unsalted butter
¾ cup sweetened shredded coconut
½ cup chopped pecans
½ teaspoon vanilla extract
🧁 Instructions
Make the chocolate filling:
In a medium bowl, whisk together the instant chocolate pudding mix and cold milk for about 2 minutes until thick. Pour into the prepared crust and smooth the top. Refrigerate for at least 30 minutes to set.
Prepare the coconut-pecan topping:
In a small saucepan over medium heat, combine evaporated milk, sugar, egg yolk, and butter. Stir constantly until the mixture thickens and begins to bubble, about 5–7 minutes.
Add the mix-ins:
Remove from heat. Stir in coconut, pecans, and vanilla extract. Allow to cool for 10–15 minutes, stirring occasionally, until it reaches a spreadable consistency.
Assemble the pie:
Spread the cooled coconut-pecan topping over the chilled chocolate pudding layer.
Chill again for at least 1 hour (or overnight) before slicing and serving.
