Balsamic Grilled Vegetables

 

Grilled Garden Medley with a Balsamic Glaze

Ingredients:

2 zucchinis, sliced into rounds

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

1 red onion, cut into wedges

1 cup cherry tomatoes

1/4 cup balsamic vinegar

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil for garnish

Directions:

Preheat your grill to medium-high heat.

In a large bowl, combine the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper. Whisk until well blended.

Add the sliced zucchinis, bell peppers, red onion, and cherry tomatoes to the bowl. Toss the vegetables in the balsamic mixture until they are evenly coated.

Place the vegetables in a grill basket or directly on the grill grates. Grill for about 10-15 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.

Remove the vegetables from the grill and transfer them to a serving platter. Drizzle with any remaining balsamic mixture and garnish with fresh basil.
