Ingredients:
- 2 eggs
 - 1/3 cup honey or maple syrup
 - 1/3 cup olive oil or melted coconut oil
 - 1/2 cup plain Greek yogurt (or unsweetened applesauce)
 - 1 tsp vanilla extract
 - 1 1/2 cups grated zucchini (no need to peel, squeeze lightly if very wet)
 - 1 1/2 cups whole wheat flour (or all-purpose or gluten-free blend)
 - 1/2 tsp baking soda
 - 1/2 tsp baking powder
 - 1 tsp cinnamon
 - 1/4 tsp nutmeg (optional)
 - 1/4 tsp salt
 - 1/2 cup chopped nuts or dark chocolate chips (optional)
 
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
 - Mix wet ingredients: In a large bowl, whisk eggs, honey/maple syrup, oil, yogurt, and vanilla until smooth.
 - Add zucchini: Stir in grated zucchini.
 - Add dry ingredients: Sprinkle flour, baking soda, baking powder, cinnamon, nutmeg, and salt over the wet mixture. Stir just until combined.
 - Optional add-ins: Fold in nuts or chocolate chips if using.
 - Pour into pan and smooth the top.
 - Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan 10 minutes, then transfer to a rack to cool completely.
