Ingredients:
2 pounds baby potatoes (halved)
3 tablespoons olive oil
4 cloves garlic (minced)
1 teaspoon dried Italian seasoning
½ teaspoon paprika
Salt and black pepper to taste
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (or 1 tsp dried)
Optional: chopped chives or green onions for garnish
Instructions:
Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prep Potatoes: In a large bowl, toss halved baby potatoes with olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.
Roast: Spread the potatoes cut-side down on the baking sheet. Roast for 25–30 minutes or until golden and crispy.
Add Cheese: Remove the pan from the oven, sprinkle mozzarella and Parmesan evenly over the potatoes, and return to the oven for 5–7 minutes until melted and bubbly.
Garnish & Serve: Sprinkle with fresh parsley and any optional herbs. Serve hot as a side dish or snack.
