Cheesy Mashed Potato Muffins

Ingredients

For approximately 12 muffins:

-3 large potatoes, peeled and diced

-2 tablespoons butter

-1/2 cup milk or cream

-2 cups prepared mashed potatoes (from above)

-1 cup shredded mozzarella cheese (or any melty cheese)

-1/2 cup grated Parmesan cheese

-1 egg, lightly beaten

-1/4 cup sour cream (optional for creaminess)

-1 teaspoon garlic powder

-2 tablespoons chopped fresh parsley (for garnish)

Cooking spray or butter for greasing the muffin tin

To start, peel and dice your potatoes, then boil them in a large pot of salted water. Once they are tender, drain the water and mash the potatoes.
