ROASTED SWEET POTATOES

Ingredients

  • 3 sweet potatoes, peeled and cut into bite-size cubes 🍠
  • 2 teaspoons olive oil 🫒
  • 1 tablespoon butter 🧈
  • 1 tablespoon brown sugar (add more if you prefer them sweeter) 🍯
  • 1 teaspoon ground cinnamon 🌿
  • ¼ teaspoon ground nutmeg 🌰
  • Pinch of ground ginger 🧄
  • Sea salt, to taste 🧂

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
  2. Step 2: Prepare the Sweet Potatoes
    1. Peel the sweet potatoes and cut them into evenly sized bite-size cubes. This ensures they cook evenly and develop a crispy exterior.
    2. Place the cubed sweet potatoes in a large bowl.

Step 3: Coat with Oil and Spices

  1. Drizzle the olive oil over the sweet potatoes and toss to coat evenly.
  2. Add the brown sugar, cinnamon, nutmeg, ginger, and a pinch of sea salt. Toss again until the sweet potatoes are well-coated with the spice mixture.

Step 4: Roast the Sweet Potatoes

  1. Spread the sweet potatoes out in a single layer on the prepared baking sheet. Make sure they’re not overcrowded—this helps them roast instead of steam.
  2. Dot the sweet potatoes with small pieces of butter, distributing it evenly across the pan for added richness.
  3. Roast in the preheated oven for 25–30 minutes, flipping the sweet potatoes halfway through cooking, until they’re golden brown, caramelized, and fork-tender.

Step 5: Taste and Adjust

  1. Once roasted, taste the sweet potatoes and adjust seasoning if needed. Add a bit more brown sugar for extra sweetness or a pinch of salt to enhance the flavors.

Step 6: Serve

  1. Transfer the roasted sweet potatoes to a serving dish. Garnish with an extra sprinkle of cinnamon or a drizzle of melted butter if desired.
  2. Serve warm as a side dish or enjoy them as a standalone snack.
