For the Bread:

- 1/2 cup granulated sugar

- 1/2 cup buttermilk (or substitute with milk + 1 tsp vinegar)

- 1/2 cup chopped pecans or walnuts
- 1/2 cup raisins or dried cranberries
Step-by-Step Instructions
Step 1: Preheat & Prep
- Preheat your oven to 350°F (175°C) . Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
Step 2: Prepare the Wet Ingredients
- In a large mixing bowl, whisk together the mashed sweet potato, melted butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, followed by the vanilla extract.
Step 3: Mix the Dry Ingredients
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
Step 4: Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined—do not overmix.
- If using optional add-ins like nuts or dried fruit, gently fold them into the batter.
Step 5: Bake
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50–60 minutes , or until a toothpick inserted into the center comes out clean.
Step 6: Cool & Slice
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
