Sweet Potato Bread

Ingredients You’ll Need

Makes 1 loaf

For the Bread:

    • 1 cup mashed cooked sweet potato (about 1 medium sweet potato, roasted or boiled)

    • 1/2 cup unsalted butter , melted
    • 1/2 cup granulated sugar
    • 1/4 cup brown sugar (for added depth of flavor)

    • 2 large eggs , lightly beaten

    • 1 tsp vanilla extract

    • 1 1/2 cups all-purpose flour

    • 1 tsp baking powder

    • 1/2 tsp baking soda

    • 1/2 tsp salt

    • 1 tsp ground cinnamon

    • 1/4 tsp ground nutmeg

    • 1/8 tsp ground cloves

  • 1/2 cup buttermilk (or substitute with milk + 1 tsp vinegar)
  • Optional Add-Ins :
    • 1/2 cup chopped pecans or walnuts
    • 1/2 cup raisins or dried cranberries

Step-by-Step Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 350°F (175°C) . Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.

Step 2: Prepare the Wet Ingredients

  1. In a large mixing bowl, whisk together the mashed sweet potato, melted butter, granulated sugar, and brown sugar until smooth.
  2. Beat in the eggs one at a time, followed by the vanilla extract.

Step 3: Mix the Dry Ingredients

  1. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

Step 4: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined—do not overmix.
  2. If using optional add-ins like nuts or dried fruit, gently fold them into the batter.

Step 5: Bake

  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake in the preheated oven for 50–60 minutes , or until a toothpick inserted into the center comes out clean.

Step 6: Cool & Slice

  1. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
