St. Patrick’s Day Baileys Chocolate Mousse

 

Ingredients You’ll Need

 

Serves 6–8

For the Mousse:

  • 8 oz semi-sweet or dark chocolate , finely chopped
  • 1/2 cup heavy whipping cream
  • 1/4 cup Baileys Irish Cream (or more to taste)
  • 2 large eggs , separated
  • 2 tbsp granulated sugar

For Garnish:

  • Whipped cream
  • Chocolate shavings
  • Green sprinkles or edible gold dust (for festive flair)

Step-by-Step Instructions

Step 1: Melt the Chocolate

  1. Place the chopped chocolate in a heatproof bowl.
  2. Heat the heavy whipping cream in a small saucepan over medium heat until it just begins to simmer (do not boil).
  3. Pour the hot cream over the chocolate and let it sit for 2–3 minutes. Stir gently until the chocolate is completely melted and the mixture is smooth. Let it cool slightly.

Step 2: Add Baileys

  1. Stir the Baileys Irish Cream into the melted chocolate mixture until fully incorporated. Set aside to cool further while you prepare the eggs.

Step 3: Whip the Egg Whites

  1. In a clean mixing bowl, beat the egg whites with an electric mixer until soft peaks form.
  2. Gradually add the sugar and continue beating until stiff, glossy peaks form. Be careful not to overmix.

Step 4: Combine the Mixtures

  1. In a separate bowl, beat the egg yolks lightly, then whisk them into the cooled chocolate mixture until smooth.
  2. Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it.
  3. Carefully fold in the remaining egg whites in two additions, being careful not to deflate the mixture.

Step 5: Chill

  1. Divide the mousse evenly among serving glasses or bowls.
  2. Refrigerate for at least 4 hours , or overnight, to allow the mousse to set and the flavors to meld.

Step 6: Garnish & Serve

  1. Top each serving with a dollop of whipped cream, chocolate shavings, and green sprinkles or edible gold dust for a festive touch.
  2. Serve chilled and enjoy the creamy, boozy goodness!
