Ingredients
• 1/2 cup (1 stick) unsalted butter (softened)
• 1 cup granulated sugar
1 large egg
• 1 tsp vanilla extract
• 1 tbsp lemon zest
• 2 tbsp freshly squeezed lemon juice
• 1 1/2 cups all-purpose flour
• 1/4 tsp baking powder
• 1/4 tsp baking soda
• 1/4 tsp salt
• 1/2 cup powdered sugar (for rolling)
Instructions
1. Preheat Oven:
• Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Make the Dough:
1. In a large bowl, cream the butter and granulated sugar together until light and fluffy.
2. Add the egg, vanilla extract, lemon zest, and lemon juice. Mix until well combined.
3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until a dough forms.
3. Chill the Dough:
• Cover the dough and refrigerate for at least 30 minutes. This helps the dough firm up and prevents the cookies from spreading too much.
4. Shape the Cookies:
1. Roll the chilled dough into 1-inch balls.
2. Roll each ball in powdered sugar until fully coated.
5. Bake:
• Place the balls on the prepared baking sheet, spaced about 2 inches apart. Bake for 10-12 minutes, or until the edges are set and the tops are crinkled. Avoid overbaking to keep the cookies soft.
6. Cool and Serve:
• Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
