Winter Wonderland Stew

Ingredients

(Serves 4–6)

    • 1 pound (450g) ground beef or ground turkey
    • 3 cups (720ml) beef or chicken broth
    • 1 (10.5 oz) can condensed cream of mushroom soup (or cream of chicken soup)
    • 1 (16 oz) bag frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 4 cups (500g) diced potatoes (peeled, if desired)

Instructions

Step 1: Cook the Ground Meat
  1. In a large pot or Dutch oven, cook the ground beef (or turkey) over medium heat until browned. Drain any excess grease.

Step 2: Add the Broth and Soup
    1. Stir in the broth and condensed cream of mushroom soup. Mix until smooth and bring to a gentle simmer.

Step 3: Add Potatoes and Vegetables
  1. Add the diced potatoes and frozen mixed vegetables to the pot. Stir to combine.

Step 4: Simmer
  1. Cover and simmer over low heat for 20–25 minutes, or until the potatoes are tender and the flavors have melded together. Stir occasionally to prevent sticking.

Step 5: Serve
    1. Ladle the stew into bowls and serve hot. Pair with crusty bread, biscuits, or crackers for a complete meal.
