Cowboy Meatloaf and Potato Casserole

This delicious casserole mixes the tasty flavors of meatloaf with creamy potatoes to make a filling and satisfying dish. Basic ingredients combine to create a meal that is ideal for a quick weeknight dinner.

Cowboy Meatloaf and Potato Casserole

Ingredients:

Amount of Ingredients

1 pound of ground beef

One chopped onion.

2 pieces of chopped garlic.

1 cup of breadcrumbs

1/4 cup of ketchup

2 tablespoons of Worcestershire sauce

1 teaspoon of dried thyme

Add salt and pepper according to your preference.

Cut four large potatoes into thin slices.

Grated cheddar cheese: 1 cup

Fresh parsley, chopped finely (if desired) to decorate.

1/4 cup of ketchup

2 tablespoons of Worcestershire sauce

1 teaspoon of dried thyme

Add salt and pepper according to your preference.

Cut four big potatoes into thin slices.

Grated cheddar cheese: 1 cup

Fresh parsley, chopped finely, can be added as a garnish if desired.

Directions:

Before you start, warm up your oven to 375°F (190°C) and grease a baking dish that is 9×13 inches in size.

Prepare the meatloaf: In a big bowl, mix together ground beef, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Stir thoroughly until everything is mixed evenly.

Place half of the sliced potatoes at the bottom of the greased baking dish. Form the meatloaf mixture into a loaf shape and place it on top of the potatoes. Place the rest of the cut potatoes on top of the meatloaf, making sure to cover it entirely.

Put aluminum foil on top of the dish and bake it for 45 minutes. Take off the foil, put the grated cheddar cheese on top, and bake for another 15-20 minutes until the potatoes are soft and the cheese is melted and bubbly.

Serve and enjoy: Allow the dish to cool a bit before cutting and serving it. Add some chopped fresh parsley on top, if you like.
