Ranchero steak with potatoes

Ranchero steak with fries is one of those dishes that brings back all the memories. It reminds me of my grandmother’s Sundays when she made this with her homemade tortillas, (food freedom!). It also reminds me of many meals at home with my dad and I can imagine Mamie roasting vegetables for the sauce. This recipe is very simple but full of flavor thanks to that sauce.
*ingredients

°1 1/2 pounds skirt steak
°8 ounce can of tomato sauce
°2-3 serrano peppers
°3 Roma tomatoes
°2 bay leaves
°A small white onion
°1 clove of garlic
°3 small potatoes
°Salt and Pepper
°5 tablespoons of olive oil
*How to make ranchero steak with potatoes
Add 4 tablespoons of olive oil to the skillet and cook the potato slices until tender. Remove from oil, add minced garlic to remaining oil, allow to marinate, then add thinly sliced beef (cook until all the juice is released from meat and remove meat from skillet, add 1 tablespoon olive oil and add sliced onion and serrano pepper until onion is soft translucent then add diced tomato ( cook 1 minute), add the tomato sauce and 2 bay leaves and leave until bubbly, add the meat and potatoes and stir well, cover and simmer for 10 minutes.
