Strawberry Earthquake Cake

This Strawberry Earthquake Cake is an easy dessert recipe made with white cake mix, cream cheese, strawberries, and a few extra mix-ins. It’s simple to put together and makes a rich, sweet treat with a cracked “earthquake” effect on top.

Ingredients:

  • 1 box white cake mix

  • Ingredients called for on the cake mix box (usually eggs, oil, and water)

  • 1 cup chopped strawberries

  • 1 package (8 oz) cream cheese, softened

  • ½ cup unsalted butter, melted

  • 4 cups powdered sugar

  • 1 teaspoon vanilla extract

  • ½ cup coconut flakes

  • ½ cup white chocolate chips

Directions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.

  2. Prepare the cake batter by following the directions on the back of the white cake mix box. Fold in chopped strawberries. Pour the batter into the prepared dish.

  3. Make the cream cheese filling by mixing softened cream cheese, melted butter, powdered sugar, and vanilla extract until smooth.

  4. Drop spoonfuls of the cream cheese mixture over the cake batter. Do not stir.

  5. Sprinkle the top with coconut flakes and white chocolate chips.

  6. Bake for 40–45 minutes, or until the cake is set and lightly golden on the edges.

  7. Cool the cake before serving. The surface will crack and shift while baking, giving it the “earthquake” appearance.

This cake is sweet, gooey, and full of flavor with a soft center and a crackled top. Great for parties, potlucks, or any time you want a fun twist on a boxed cake mix.
