This Strawberry Earthquake Cake is an easy dessert recipe made with white cake mix, cream cheese, strawberries, and a few extra mix-ins. It’s simple to put together and makes a rich, sweet treat with a cracked “earthquake” effect on top.
Ingredients:
-
1 box white cake mix
-
Ingredients called for on the cake mix box (usually eggs, oil, and water)
-
1 cup chopped strawberries
-
1 package (8 oz) cream cheese, softened
-
½ cup unsalted butter, melted
-
4 cups powdered sugar
-
1 teaspoon vanilla extract
-
½ cup coconut flakes
-
½ cup white chocolate chips
Directions:
-
Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
-
Prepare the cake batter by following the directions on the back of the white cake mix box. Fold in chopped strawberries. Pour the batter into the prepared dish.
-
Make the cream cheese filling by mixing softened cream cheese, melted butter, powdered sugar, and vanilla extract until smooth.
-
Drop spoonfuls of the cream cheese mixture over the cake batter. Do not stir.
-
Sprinkle the top with coconut flakes and white chocolate chips.
-
Bake for 40–45 minutes, or until the cake is set and lightly golden on the edges.
-
Cool the cake before serving. The surface will crack and shift while baking, giving it the “earthquake” appearance.
This cake is sweet, gooey, and full of flavor with a soft center and a crackled top. Great for parties, potlucks, or any time you want a fun twist on a boxed cake mix.
