Garlic Herb Crusted Lamb Chops
Ingredients (4 servings)
- 8 lamb chops (about 1 inch thick, Frenched if possible)
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 2 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme, finely chopped
- 1 tbsp fresh parsley, chopped
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Dijon mustard (optional, for extra flavor)
Instructions
- Prepare the chops
- Pat lamb chops dry with paper towels.
- Season generously with salt and pepper on both sides.
- Make the garlic herb rub
- In a small bowl, combine olive oil, garlic, rosemary, thyme, parsley, and Dijon mustard (if using).
- Marinate
- Rub mixture all over the lamb chops.
- Cover and let marinate for at least 30 minutes (or up to overnight in the fridge).
- Cook
- Preheat oven to 400°F (200°C).
- Heat a skillet (cast iron is best) over medium-high heat.
- Sear lamb chops 2 minutes per side until nicely browned.
- Transfer skillet to oven and roast for 5–8 minutes (depending on thickness) for medium-rare (internal temp ~135°F / 57°C).
- Rest & serve
- Remove from oven, cover loosely with foil, and let rest 5 minutes.
- Serve with roasted vegetables, mashed potatoes, or a fresh mint sauce. 🌱
