Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
½ cup brown sugar, packed
2 large eggs
2 tsp vanilla extract
2 ¾ cups all-purpose flour
1 tsp baking soda
½ tsp cream of tartar
½ tsp salt
Cinnamon Sugar Coating:
½ cup granulated sugar
2 tsp ground cinnamon
Directions:
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Beat in eggs one at a time, then add vanilla extract.
In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt. Gradually add to wet ingredients and mix until just combined.
In a small bowl, mix cinnamon and sugar for coating.
Scoop dough into 1-inch balls, roll each in cinnamon sugar, and place on baking sheets about 2 inches apart.
Bake 9–11 minutes, until edges are lightly golden.
Cool on baking sheets for 2 minutes before transferring to wire racks.
