Crispy Beef & Cheese Chimichangas
Ingredients:
- 1 lb (450g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup tomato sauce OR salsa
- 1 tsp ground cumin
- 1/2 tsp chili powder
- Salt & pepper to taste
- 1 cup shredded cheddar cheese (or a mix like cheddar + Monterey Jack)
- 6 large flour tortillas
- Oil for frying (or brushing if baking)
Instructions:
- Cook the beef:
In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess fat. - Add flavor:
Stir in tomato sauce (or salsa), cumin, chili powder, salt & pepper. Simmer for 5 minutes until thick. Let it cool slightly. - Assemble the chimichangas:
Spoon beef mixture into the center of each tortilla. Top with cheese. Fold sides in, then roll tightly like a burrito. - Fry ’em up:
Heat 1 inch of oil in a pan over medium heat. Fry each chimichanga seam-side down first, 2–3 minutes per side or until golden brown and crispy. Drain on paper towels.
OR Bake:
Brush chimis with oil or melted butter. Bake at 400°F (200°C) for 20–25 minutes until crispy and golden.
🔥 Optional Add-ins:
- Cooked rice or refried beans inside
- Jalapeños for a spicy kick
- Serve with sour cream, guac, or salsa
