Sausage Potato Casserole with Veggies

Ingredients

  • 4 cups potatoes, peeled and diced
  • 2 cups cooked sausage (smoked, Italian, or breakfast style), sliced or crumbled
  • 1 cup bell peppers, chopped (mix of red, green, yellow)
  • 1 cup zucchini, diced (optional)
  • 1 cup broccoli florets
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup milk or cream
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt & pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Preheat oven to 200°C / 400°F.
  2. In a large skillet, heat olive oil and sauté onion, garlic, and sausage until browned (5–6 minutes).
  3. Add the bell peppers, zucchini, and broccoli, cook for another 3–4 minutes.
  4. In a large mixing bowl, combine diced potatoes, cooked sausage-veggie mix, paprika, salt, and pepper.
  5. Pour the mixture into a greased baking dish (9×13 inch).
  6. Drizzle with milk/cream and sprinkle cheese evenly on top.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for an additional 20 minutes or until potatoes are fork-tender and cheese is golden.
  9. Garnish with chopped parsley or chives if desired. Serve warm!
