Ingredients:
2 lb pork loin roast
2 tbsp olive oil
2 large onions, sliced
1/4 cup honey
1/4 cup soy sauce
2 cloves garlic, minced
1 tsp dried thyme
Salt and pepper to taste
Preparation:
Preheat oven to 375°F (190°C). Rub the pork loin with olive oil, salt, and pepper.
In a roasting pan, place the sliced onions and garlic. Drizzle with honey and soy sauce.
Place the pork loin on top of the onions. Sprinkle with thyme.
Roast in the oven for 45-60 minutes, or until the internal temperature reaches 145°F (63°C).
Baste the pork with the pan juices halfway through cooking for extra flavor.
Let the roast rest for 10 minutes before slicing.
