Classic Potato Pancakes

These crispy, golden potato pancakes are a delicious comfort food, perfect as a side dish or snack!

Ingredients:

• 4 large russet potatoes, peeled and grated

• 1 small onion, grated

• 2 eggs, beaten

• ¼ cup all-purpose flour (or matzo meal for a traditional version)

• 1 tsp salt

• ½ tsp black pepper

• ½ tsp garlic powder (optional)

• ½ tsp baking powder (for extra crispiness)

• Vegetable oil for frying

Instructions:

1. Prepare Potatoes & Onion

• Grate the potatoes and onion, then place them in a clean kitchen towel.

• Squeeze out as much excess liquid as possible.

2. Mix Batter

• In a bowl, combine the grated potatoes and onion with eggs, flour, salt, pepper, garlic powder, and baking powder.

3. Fry Pancakes

• Heat oil in a large skillet over medium-high heat.

• Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly.

• Fry for 3-4 minutes per side or until golden brown and crispy.

4. Drain & Serve

• Remove pancakes and drain on paper towels.

• Serve hot with sour cream or applesauce.
