This Pineapple Quick Bread is moist, sweet, and packed with tropical flavor! Perfect for breakfast, a snack, or dessert.
Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon (optional, for extra flavor)
2 eggs
½ cup vegetable oil or melted butter
1 teaspoon vanilla extract
1 (20-ounce) can crushed pineapple (with juice, don’t drain)
½ cup chopped nuts (like walnuts or pecans, optional)
½ cup shredded coconut (optional, for a tropical touch)
Instructions:
1. Preheat Oven & Prepare Pan:
Preheat your oven to 350°F (175°C).
Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
2. Mix Dry Ingredients:
In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
3. Mix Wet Ingredients:
In another bowl, whisk together eggs, oil (or melted butter), vanilla, and crushed pineapple with juice.
4. Combine & Fold:
Gradually mix the wet ingredients into the dry ingredients until just combined.
Fold in chopped nuts and coconut if using.
5. Bake:
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
6. Cool & Serve:
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
