Here’s a simple recipe for Muffins with Sausage:

Ingredients:

•2 cups (250 g) all-purpose flour

•1 tbsp baking powder

•1/2 tsp salt

•1/2 tsp black pepper (optional)

•1/4 tsp garlic powder or paprika (optional, for flavor)

•1/3 cup (80 ml) vegetable oil or melted butter

•2 large eggs

•1 cup (240 ml) milk

•1 cup (200 g) cooked sausage (crumbled or chopped into small pieces)

•1/2 cup (50 g) shredded cheese (cheddar or your choice, optional)

•2 tbsp chopped fresh parsley or chives (optional, for garnish)

Instructions:

1.Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

2.Prepare Sausage: Cook the sausage in a pan over medium heat until browned and cooked through. Drain excess grease and let it cool slightly.

3.Mix Dry Ingredients: In a large mixing bowl, whisk together flour, baking powder, salt, pepper, and any optional spices.

4.Mix Wet Ingredients: In a separate bowl, beat the eggs, then mix in the milk and oil/butter until combined.

5.Combine Wet and Dry: Gradually pour the wet ingredients into the dry ingredients. Stir until just combined (don’t overmix; it’s okay if the batter is slightly lumpy).

6.Add Sausage and Cheese: Fold the cooked sausage and shredded cheese (if using) into the batter.

7.Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full.

8.Bake: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.

9.Cool and Serve: Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
