POTATO AND ONION CAKE

Ingredients:

  • 2 medium potatoes, peeled and grated
  • 1 large onion, finely chopped
  • 2 eggs
  • 1 cup flour (all-purpose)
  • 1/2 cup grated cheese (optional, cheddar works well)
  • 1/2 tsp baking powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil or vegetable oil
  • 1/4 tsp dried thyme or rosemary (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a round cake pan or line it with parchment paper.
  2. Prepare Potatoes and Onions: In a large bowl, combine the grated potatoes and chopped onions. Squeeze out excess moisture from the potatoes using a clean kitchen towel or cheesecloth.
  3. Mix the Batter: Add the eggs, flour, grated cheese (if using), baking powder, thyme, salt, and pepper to the potato-onion mixture. Stir everything together until well combined.
  4. Cook the Cake: Heat oil in a frying pan over medium heat. Pour the potato mixture into the pan, pressing it down into an even layer. Cook for about 4-5 minutes on one side, until golden brown.
  5. Bake: Transfer the cake to the oven and bake for about 20-25 minutes or until the top is golden and crisp.
  6. Serve: Let the cake cool slightly before slicing and serving. You can serve it as a savory snack, side dish, or light meal.
