Ingredients
•1 lb (450 g) beef stew meat (cut into small cubes)
•2 tbsp olive oil
•1 onion, chopped
•2 garlic cloves, minced
•3 carrots, peeled and sliced
•3 celery stalks, sliced
•3 potatoes, peeled and diced
•1 cup green beans, cut into 1-inch pieces
•1 can (14 oz) diced tomatoes
•6 cups beef broth
•1 cup frozen corn
•1 cup frozen peas
•1 tsp dried thyme
•1 tsp dried basil
•Salt and pepper to taste
•Fresh parsley for garnish (optional)
Instructions
1.Sear the beef:
•Heat olive oil in a large pot over medium-high heat.
•Season the beef cubes with salt and pepper. Add them to the pot and brown on all sides (about 5-7 minutes). Remove beef and set aside.
2.Sauté the veggies:
•In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
3.Combine and simmer:
