Crispy Bacon Fritters

🧺 Ingredients (for 8–10 fritters)

  • 6 slices bacon, chopped
  • 1 small onion, finely diced
  • 1 cup (120 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 eggs
  • ½ cup (120 ml) milk
  • ½ cup (50 g) grated cheese (cheddar or mozzarella)
  • 2 tbsp chopped parsley (optional)
  • Oil for frying (vegetable or sunflower)

🔥 Instructions

  1. Cook the bacon
    • In a pan over medium heat, cook chopped bacon until crispy.
    • Remove and drain on paper towels. Keep about 1 tbsp of bacon fat in the pan.
  2. Sauté onion
    • In the same pan, add diced onion and cook for 2–3 minutes until soft and golden.
    • Let it cool slightly.
  3. Make the batter
    • In a large bowl, mix flour, baking powder, salt, and pepper.
    • In another bowl, whisk eggs and milk together.
    • Pour wet ingredients into the dry and mix until smooth (it should be thick, like pancake batter).
    • Fold in the bacon, onion, cheese, and parsley.
  4. Fry the fritters
    • Heat about 1 cm of oil in a skillet over medium heat.
    • Drop spoonfuls of batter into the pan and flatten slightly.
    • Cook 2–3 minutes per side until golden and crispy.
    • Drain on paper towels.
  5. Serve warm
    • Enjoy with sour cream, spicy mayo, or a drizzle of maple syrup for a sweet-and-salty twist!

💡 Tips

  • You can add corn kernels or chopped scallions for extra texture.
  • For a lighter version, cook them in an air fryer (180°C / 350°F for 8–10 min).
  • Works great for breakfast sandwiches too — add a fried egg on top! 🍳
