Crispy Bacon Fritters
🧺 Ingredients (for 8–10 fritters)
- 6 slices bacon, chopped
- 1 small onion, finely diced
- 1 cup (120 g) all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 eggs
- ½ cup (120 ml) milk
- ½ cup (50 g) grated cheese (cheddar or mozzarella)
- 2 tbsp chopped parsley (optional)
- Oil for frying (vegetable or sunflower)
🔥 Instructions
- Cook the bacon
- In a pan over medium heat, cook chopped bacon until crispy.
- Remove and drain on paper towels. Keep about 1 tbsp of bacon fat in the pan.
- Sauté onion
- In the same pan, add diced onion and cook for 2–3 minutes until soft and golden.
- Let it cool slightly.
- Make the batter
- In a large bowl, mix flour, baking powder, salt, and pepper.
- In another bowl, whisk eggs and milk together.
- Pour wet ingredients into the dry and mix until smooth (it should be thick, like pancake batter).
- Fold in the bacon, onion, cheese, and parsley.
- Fry the fritters
- Heat about 1 cm of oil in a skillet over medium heat.
- Drop spoonfuls of batter into the pan and flatten slightly.
- Cook 2–3 minutes per side until golden and crispy.
- Drain on paper towels.
- Serve warm
- Enjoy with sour cream, spicy mayo, or a drizzle of maple syrup for a sweet-and-salty twist!
💡 Tips
- You can add corn kernels or chopped scallions for extra texture.
- For a lighter version, cook them in an air fryer (180°C / 350°F for 8–10 min).
- Works great for breakfast sandwiches too — add a fried egg on top! 🍳
