Garlic Butter Steak Bites and Cheesy Smashed Potatoes

Garlic Butter Steak Bites

Ingredients:

  • 500 g (1 lb) sirloin or ribeye steak, cut into bite-sized cubes
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme (or fresh sprigs)
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Pat steak cubes dry and season generously with salt, pepper, paprika, and thyme.
  2. Heat olive oil in a large skillet over high heat until shimmering.
  3. Add steak bites in a single layer (work in batches if needed). Cook 2–3 minutes per side until browned and cooked to your liking. Remove from skillet.
  4. Lower heat to medium, add butter and garlic to the skillet. Sauté 30 seconds until fragrant.
  5. Return steak bites to the pan, toss in the garlic butter, and garnish with parsley.

🥔 Cheesy Smashed Potatoes

Ingredients:

  • 700 g (1.5 lbs) baby potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 cup shredded cheddar (or mozzarella for extra stretch)
  • ¼ cup grated Parmesan
  • Salt & pepper, to taste
  • Fresh chives or parsley, chopped

Instructions:

  1. Boil potatoes in salted water until fork-tender (about 15–20 min). Drain and let cool slightly.
  2. Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper.
  3. Place potatoes on the sheet, then gently smash each one with the bottom of a glass.
  4. Drizzle with olive oil, season with garlic powder, salt, and pepper.
  5. Bake for 20 minutes until golden and crispy.
  6. Sprinkle cheeses on top and return to oven for 5 minutes, until melted and bubbly.
  7. Garnish with chives or parsley.
